Nelson Slices.

Sometimes called Nelson Cake, this is a Nolfolk County version of Bread Pudding, named after Admiral Nelson who was a Norfolk man, born at Burnham Thorpe on the north coast, where his father was a Rector.

1 lb stale bread

3 oz sultanas

3 oz raisins

4 oz brown sugar,

1/2 teaspoon ground nutmeg

Grated rind of half a lemon

2 tablespoons orange marmalade

3 oz butter, melted

i egg, beaten

1 tablespoon of rum

Soak the bread in water for 1 hour. Set oven to 400 f. Butter a deep pie dish or roasting tin, about 7" x 11" or similar. Squeeze the water out of the bread, put it in a bowl and break up any lumps with a folk, until the bread is creamy. Stir in the dried fruit, then add the rest of the ingredients and beat well together. Turn into the dish or tin, spread out evenly and bake for 30 to 40 minutes. While still hot sprinkle with a little extra sugar. Serve slices hot, with either custard, Devon Cream or Devon Clotted Cream or if preferred eat cold like cake.
